Candied Sweet Potatoes

Do you know when is the potato digging time? It’s about the late September that’s coming. So I think about the sweet potato and want to find the easy recipe for today. I can be both a side dish and sweet snack for you, whatever you want. Besides simple starches, sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient), vitamin C, and vitamin B6. Also, you can use sweet potato for many recipes like Sweet potato pie, Sweet potato fries and Sweet Potato Butter etc.

Ingredients
- 3/4 cup water
- 3/4 teaspoon of cinnamon
- 1/2 teaspoon of grated orange rind
- 1/2 teaspoon of nutmeg
- 1/2 stick margarine
- 1 scant teaspoon of vanilla
- 1 1/2 cup sugar
- 6 medium sweet potatoes

Preparation
1. Prepare potatoes (peel, slice and wash) and keep covered with water until ready to cook.
2. Add 3/4 cup water, margarine, 1 scant teaspoon vanilla flavor and 1 cup sugar in Dutch or large pot.
3. Cover and bring to a rapid boil. Stir frequently, so as not to let the syrup stick.
4. Add the potatoes when the syrup has thickened.
5. Mix the cinnamon, orange rind, nutmeg and 1/2 cup sugar, and sprinkle over the potatoes.
6. Lower the heat and cook until tender. Gently spoon the syrup over the potatoes.
